Ingredients:
- 4 roasted chicken breasts
- 2 onions
- 3 cloves of garlic
- 2 yellow peppers
- 2 red peppers
- Chili powder 1 teaspoon
- Cumin 1 teaspoon
- Β½ teaspoon of ground red pepper
- Β½ teaspoon of cayenne pepper
- Tinned tomatoes 600 g
- Fresh basil leaves 20 g
- Olive oil
- Salt
Cooking Instructions
- Roast 4 chicken breasts with a bone in advance at 200 degrees C for 30 minutes.
- Chop 2 medium sized onions and add into a hop deep pan with some olive oil. Fry your onions for 10 minutes. Then, finely chop 3 cloves of garlic and add to the onion.
- After that, roughly cut 2 yellow and 2 red peppers in big chunks and add to the pan.
- Then, add 1 teaspoon of chili powder and 1 teaspoon of cumin. Next, add a half of a teaspoon of ground red pepper and a half of a teaspoon of cayenne pepper. Add 2 teaspoons of salt.
- Next, mash 600 g of tinned tomatoes in the food processor. Then, place your mashed tomatoes into the sauce.
- Chop 20 g of fresh basil leaves of add to the sauce.
- While the sauce is cooking, take your chicken breasts remove bones and cut them in chunks. Place the chicken into the pan and mix.
- Cook for 20 minutes at medium heat.
