Ingredients:
- 1 Bone-in standing rib roast 4 kg
- Mushrooms 500 g
- Celery 200 g
- Carrots 200 g
- Onion 100 g
- Red wine 200 ml
- Chicken stock 200 ml
- Fresh rosemary 30 g
- 3 cloves of garlic
- Cayenne pepper ½ teaspoon
- Extra virgin olive oil 50 ml
- Salt
- Pepper
Cooking Instructions:
- Take a deep baking tray and roughly chop mushrooms, celery, carrots, onion. You can use vegetables to your own taste.
- Then, add 200 ml of red wine and 200 ml of chicken stock into a deep baking tray. Season your vegetables with salt and pepper. Then, add a couple of bay leaves.
- Then, prepare a spicy mixture for crisp roast. Take 30 g of fresh rosemary leaves and roughly chop them. Then, put them into a food processor. Then, add 3 smashed cloves of garlic. Next, add a half of a teaspoon of cayenne pepper. Blitz all these ingredients in the food processor. Gradually add 50 ml of extra virgin olive oil.
- Take beef rid and spread the rosemary mixture over the beef. Put the beef right on the vegetables into a baking tray. Season the beef with salt.
- Preheat the oven to 250 degrees and put your meat for half an hour. Then, turn the heat down to 170 degrees and roast for more 2 hours. That is how to cook beef for Christmas.
