Ingredients:
- Beef shin 500 g
- Carrot 50 g
- Shallots 50 g
- Celery 50 g
- Ginger 30 g
- 1 bulb of garlic
- Tomato puree 30 g
- A glass of dry white wine
- 1 orange
- Chicken stock 100 ml
- Parsley 30 g
- Vegetable oil
- Salt
- Pepper
Cooking Instructions
- Start by frying the beef shin in the hot oil. Then, season with salt and pepper. Fry until brown, then, set aside.
- In the same pan place carrots, peeled whole shallots, sliced celery; peeled and chopped ginger and garlic.
- Next, add tomato puree and cook for a few minutes.
- Add the shin back into the pan with a glass of dry white wine and a juice of one orange.
- Pour in the chicken stock, season with salt and pepper.
- Simmer for an hour and 20 minutes.
- This dish is perfect with gremolata – dry Italian salsa made with chopped herbs. Chop parsley and garlic together. Add orange zest.
- When the beef is cooked, scatter over some gremolata. Cook this recipe with a photo!
