Summer Berry Soup with Champagne

Ingredients:

  • Milk 500 ml
  • 4 egg whites
  • Vanilla seeds
  • Juice of 1 lemon
  • Sugar 100 g
  • Blackberries 30 g
  • Blueberries 30 g
  • Raspberries 30 g
  • Red current 30 g
  • Cream 50 ml
  • Yogurt 50 g
  • Champagne 300 ml
  • Mint

Cooking Instructions

  1. In the milk add some vanilla seeds. Whisk in the vanilla and add some mint.
  2. Bring the milk to boil.
  3. Take egg whites and whip them up. Squeeze a lemon juice in. Add some sugar.
  4. With a tablespoon place some egg whites into the milk. Cook for 4 minutes.
  5. In the blender put blackberries, blueberries, raspberries and red current.
  6. Add some mint, cream and yogurt.
  7. Add 300 ml of champagne and 2 tablespoons of sugar. Blitz.
  8. Pour the champagne mixture into the bowl.
  9. Carefully lift out the meringue and sit on the top of the soup. Cook this recipe with a photo!
